On the Island - Day # 1
The weekend began simple enough...Kofta Kabobs made with fresh ground lamb, minced oregano and mint, finished with gentle hands cupped around wooden skewers to form the cigar like shape that defines a kabob....they disappeared so fast there was little time to take a photo so you must use your imagination...you must also imagine the spicy roasted eggplant, rubbed with cinnamon, coriander, garam masala and paprika.
Bite sized cubes of eggplant roasted with spices and oil on fast high heat, then gently tossed in a tiny bit of greek yogurt and lemon zest to give them a moist beautiful gloss.....to this vision add slivers of charred zuchinni tossed with home made ramp pesto and a tangy melt on your tongue rhubarb cake and you have a night on Fire Island, Fair Harbor to be more specific....If you have never been, it is a place for doing nothing...except cooking, lying on the beach, walking to light house, riding your bike, playing scrabble and congregating with cocktail in hand on the dock to watch the sunset, period. There are no other activities, which is why we keep coming back.
