Rejoice, Reflect, Revel, and Rejuvenate

This may have to be a three-part blog….. I don’t know about you but I have a boat load to rejoice over and reflect on…..and a helluva of a lot rejuvenation to work on after I complete my end of the year reveling!

I think I’ll start at the end…Rejuvenation….it’s a complex word and means so many different things to me, I think of the body more than the mind, and my body is in dire need.

I admit to tons of dog-eared magazine articles and saved online blurbs that will give you energy, help you to lose weight, comfort you, satisfy you, fix you and change you…..if only saving them made them so!

I like to start from the inside and my insides were craving green, and whenever that happens I make Anna Thomas’ Green Soup. It is beautiful in its simplicity and fulfilling in its surge of green that courses thru you. Please make it….you will not be disappointed. I have taken it to work and shared with co-workers who need a boost. If you like kale, spinach, lemons and onions, and you have a good blender, don’t deny yourself…

For you “I’m not quite a vegan yet” people, you must try poaching a whole chicken in your slow cooker (or very slowly on the stove)…. I add different spices depending on where I want to take myself…China perhaps? Drop into your deep pot with enough water to almost cover the chicken….

Use whole spices and uncut veggies, no fuss, just let it slow simmer for a few hours, pull the flesh from the bone, discard bone and strain…..The chicken is other worldly but the broth will blow your mind!
